Moreover, food technology needs to advance to make going beyond Earth’s borders possible. In August, NASA and its Canadian counterpart announced the results of a competition dedicated to developing food processing methods that will sustain astronauts on the way to Mars. The devices showcased at the competition presented unique ways to process foods that remain functional even under zero gravity conditions. Food tech has come a long way to reach this point, developing new ways to prepare and process meals for all kinds of situations.
Yevhenii Shevchenko, an entrepreneur and a food tech expert with over 20 years of experience, knows this way first-hand and shares this knowledge with us. Within the last couple of decades, he developed and implemented an original method that preserves taste and nutritional value while keeping preparation easy and allowing for long-term food storage.
Starting with the Core Idea
The path to the new food processing technology started more than twenty years ago. Since the very beginning of his career, Yevhenii Shevchenko wanted to focus his efforts on one idea which could change people’s lives for the better. Therefore, after finishing higher education, he decided to pursue a career in the food industry.. “The food industry is directly related to one of the staples of people’s lives,” he explains. “From the very beginning, I found it important to develop more efficient and sustainable food processing technologies, aimed at serving the community and making quality meals accessible to people in harsh work or living conditions.”
Throughout his career, Yevhenii Shevchenko amassed more than 20 years of experience in business and industrial catering. He worked with clients from various industries, such as drilling factories and factories. They need to provide workers with quality meals ensuring that people who work in physically demanding environments get enough nutrition. Yevhenii Shevchenko managed to create pre-processed meals that fulfilled just this need. He focused on creating industrial and business catering solutions that will ensure all workers get a varied and nutritious diet.
Finding A Balanced Approach
The thing is that creating a food processing technology requires balancing several contradicting factors. There are many other food-preserving methods on the market, however, they all have their disadvantages. Some of them allow for the maintenance of nutritional value but involve complicated processing equipment. Others make it possible to store meals for the long term, but work only for a limited range of foods, thus lacking in flavor variety and nutritional value. Possessing a deep understanding of food processing technology, Yevhenii Shevchenko managed to find the right balance between these characteristics. He emphasizes that he wanted food rations should provide enough variety, be nutritious, and remain relatively simple in production and storage.
Since 2014, Yevhenii Shevchenko has been continuously working on improving his product. At all stages, he was deeply invested in all aspects of his business, from technical details to operational strategies, and this approach eventually paid off. He developed a unique method for meal processing, providing several advantages in comparison to more commonly used sublimation methods. The process includes several stages of thermal treatment, performed on generally available equipment. While the processing sequence is unique and requires precisely following the guidelines, it can be and has already been implemented in existing food factories of various scales. The foods are packed in the retort packaging, which allows the store of the food for up to 2 years without compromising its taste and nutritional quality. The meals can be heated with any available heating method or consumed as it is if heating is unavailable for some reason.
The technology developed by Yevhenii Shevchenko find the right balance between the accessibility, variety and nutritious value. It applies to various dishes, not limited to the most straightforward options. It breaks the stereotype of preprocessed food as purely functional, mostly bland food items, aimed to provide the needed nutritious value in the most straightforward way. Yevhenii Shevchenko’s method can be applied to the wide array of products and dishes, including those of national cuisine. The list of currently available meals includes more than 50 items, with various meat and vegetable soups, porridges, and stews. Consequently, it becomes possible to build a varied and nutritious diet, even if one needs to rely solely on these rations for a long time.
Building Solutions for People.
“Food processing technology has a variety of applications,” adds Yevhenii Shevchenko. “It is immensely useful for people who work in difficult conditions, outdoors or in remote areas. However, it is also of interest for people who maintain an active lifestyle, venture into long-distance hikes, or want to enhance their diet with accessible and nutritious meals.” There is no doubt that his products will find plenty of interested customers not limited to the local market, as he plans to enter the US market in the near future.
No matter how time- and energy-consuming developing running the business could be, Yevhenii Shevchenko finds opportunities to help people in other ways as well. Since 2006, he has provided aid and support to the Disabled Society in one of the Ukrainian cities regularly, demonstrating one more time that improving people’s lives where possible is an important motivator for him and remains a staple of his career now and in the future.
